Let it cook for about 5 minutes while stirring frequently to prevent the ingredients from sticking to the saucepan. Add water and cook until all the ingredients are soft. This should take about 20 minutes. When it is ready, leave it to cool and then add vinegar and sugar and blend the mixture. The sauce can be served with different starches such as pasta and rice among others. If you want a spicier sauce, do not remove the seeds from the scotch bonnets.
